Healthy Oven-less Pizza

Take it from us, you don't have to settle for less when you have ice-block refrigeration and a rapid expiration date on all the goods.  We value our bodies and what we put into them, regardless of how tempting it is to conjure up a quick PB&J or throw some just-add-water mixes together when you're crammed into a 27 foot space with another body...we have found quick and easy solutions. And seriously--EVERYTHING tastes phenomenal when you're hungry! 

Here are the goods for a super simple, and admittedly delicious pizza knock-off...let yourself be fooled!

*Lavash Pita Bread/Nan bread (Pitas keep longer than bread, take up less space and are extremely versatile) 
*Hummus (We've recently discovered that the just-add-water mix from Whole Foods isn't all that bad and you can't beat a cheaper price)
*Spinach
*Cucumber 
*Red/White Onion 
*Sharp Cheddar Cheese or Feta (From our local Co-Op Feta is a great price!)
*Parsley
*Oregano
*Sea Salt and Freshly Ground Pepper



 1. In a small cast iron pan, throw some olive oil (or whatever you have) down, let it heat up to sizzling point and lightly toast ONE side of your chosen flat bread (I recommend doing this step first to the amount you plan to use--2 each left us round bellied and sleepy)
2. Prepare the toasted sides with a layer of hummus, then spinach, onion, cucumbers and cheese
3. Get creative with your herbs--we almost always start with parsley and oregano (salt and pepper on occasion) and from there we proceed to dump whatever herbs and spices sound good...seriously, don't be afraid of the bottles
4. Keep it on low heat so the veggies can warm up and the cheese can melt...keep an eye on the bottom of the bread
5. Then CUT IT INTO TRIANGLES, this is important...because then you feel like you are being treated to real pizza
