Breakfast Time

What to do when you have no cereal in the morning?
We discovered a delicious simplicity:
*Honey Dew
*Banana
*Almond Milk (its boxed and delicious)
*Mixed nuts/dry fruit chopped up
(We used almonds, walnuts, pecans, peanuts, raisins, apricots, crasins all bought in bulk)
*Cinnamon

OR
Omelets are a great way to use up all your vegetables...no need to be selective or scared!
*2-3 eggs per person
*purple cabbage
*tomato
*broccoli
*green pepper
*red onion
*garlic
*Sharp cheese or Feta
*your choice of herbs!
*and if you're feeling daring in the "C" category: carrot & cauliflower...cucumber too?
*A medium sized cast iron pan about 6-7" is KEY to having this be right

*Fry your garlic until it's about crispy and throw the onions sometime in there
*Then proceeded to throw the cooked garlic & onions into a bowl with EVERYTHING ELSE you have -minus the cheese- and stir it up [don't worry please, the vegetables will be cooked plenty by the time it's over and you'll still get some nutrients out of it!]
*Get the iron hot and moist with some olive oil then turn the temp down low...pour the works into the pan
*Once the edges become firm and the egg isn't too soggy sprinkle you're cheese and selected seasonings
*Then FOLD IT IN HALF...let some of the egg run out but pull it back to seal the edges with your spatula
*Flip it to the other side if it needs and DON'T overcook your eggs, they aren't dangerous if they still have some moisture to them ;) Think of....umm...cookies or brownies for example...nobody likes them dry inside

Can't you agree boat food is not all that bad? Good way to use your veggies before they go bad!
